Over the weekend I spent a fair amount of time in the kitchen, and actually enjoyed it!
On Saturday I made a big pot of lentil soup followed by a big pot of mushroom risotto. We ate some of both and the rest is stashed away in the freezer.
Then on Sunday I made lasgane, macaroni cheese and cupcakes.
A triumph of baking and cooking! My freezer is now very happy to be filled with more than its usual bulk of meat and bread.
Was particularly proud of my cupcakes as I used my new deeper bun tin and the icing set to make them pretty! Downside? A 4 egg mix only makes 12 cakes!! eek!
